It's not 'close to retirement' old, but it's plenty old enough, and certainly far past the threshold at which it would be quite difficult to entirely rejig their qualities and playing style - particularly in a player so obviously limited to begin with.

I'd have thought the idea would more be to use him as left wing-back if Ismael goes 3 at the back? I thought his biggest asset was pretty much his crossing? We already have a left-footed CM if we're keeping Louza. I'd say we still lack some grit and strength in central midfield, regardless of whether Styles signs and where we'll use him.

Yes, but midfielders with Choudhury's ball-winning ability, combined with good progressive play on the ball, are pretty rare in the Championship. Hamer was probably the closest to that last season in the Champ but would be out of our reach. Whiteman's stats were also quite good for both sides of the game.
I think the Ismael link has more than pushed him towards signing. He knows his style, and what character he is. Hopefully we can get this one done by the end of June.
